Monday is Memorial Day. It’s a day to celebrate and honor our heroes by firing up the grill and eating burgers until we burst. But Monday is also, well, Monday. Which, for ZooFit and many other households, means it’s Meatless Monday. This might be a bit of a dilemma for those who want to eat green. We want to eat healthier for ourselves and more sustainable for the planet. Meatless Mondays makes it easy to remember to do our part of eating just a little less meat. But Memorial Day is definitely a grilling holiday.
One of the toughest foods for me to stay away from is cheese. It’s delicious, let’s all just agree on that. But it’s not always the best choice for our health, for animal welfare, or the planet.

Most of us have probably heard how an oyster creates a pearl. But in case you haven’t, here is the gist:
An irritant enters the oyster’s shell and imbeds itself in the mantle (the layer inside the shell that surrounds its body). The oyster secretes nacre to smooth over the irritant, and a pearl is formed. Nacre is sometimes called “mother-of-pearl” because of this process.
Being stuck at home with nothing else to do except write, create videos, and cook has led to long creative hours. Today, I played with an oldie but goodie recipe, my Rustic Almond Flour Loaf. Yesterday I had an epiphany. How many times do you go to fix a meal only to discover you have all the “wrong” ingredients, or not enough of the “right” ingredients?
Now, normally, we wouldn’t think twice about popping back to the store to grab what we really need. But right now with most cities and regions cracking down on leaving your home except to walk your dog outside or essentials, this issue may create a problem.

This magical creation is vegan, paleo-friendly, and local-friendly (even for the winter). The main attraction for this “salad” are the beets and sweet potatoes. Depending on the season, you can find the most vibrantly colored beets, all of which give the same great taste, but bring beautiful colors to your plate. The colors resemble a sunset, hence its name.
